Holistic Heels -Prune Salad Recipe

Prunes are making a comeback, and not just in your grandma’s pantry! Great for bone health and full of fibre, California prunes are such a simple way to add a little natural sweetness to your grain salads. Below is a quick little recipe I created; it’s so tasty that you may want to double it.


Grain Salad with Prunes

Makes 4 servings

 

Grain Salad Ingredients:

  • 1 cup rice blend, uncooked (I used brown basmati, red, and wild rice)

  • 2 cups water

  • 10 pitted prunes, quartered

  • 1/2 cup broccoli stalks, shaved  


Dressing Ingredients:

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp grainy mustard

  • 1 tsp coconut aminos

  • 1 tsp apple cider vinegar

  • Dash of salt


Directions:

  1. Cook rice and allow 15-20 mins to chill.

  2. While waiting, whisk all dressing ingredients together.

  3. Add chilled rice, prunes, broccoli, and dressing to a bowl and toss to evenly coat.

  4. Plate and enjoy!
